I'm pretty rubbish at baking so this is an incredibly easy thing to make with your over-ripe bananas. And it tastes amazing!


  • 170 grams brown sugar
  • 170 grams butter (room temp)
  • 170 grams self-rising flour
  • A few drops of Vanilla essence
  • A pinch salt
  • 2 Bananas (over-ripe)
  • 3 eggs


  1. Pre-heat oven to 160°.
  2. Chop up the bananas.
  3. Mix the butter and sugar together.
  4. Mix everything else in.
  5. Pour into loaf tin.
  6. Bake for 60 mins.
  7. Check on it at around 45 mins. If it's starting to burn, cover with foil for the remaining 15 mins.
  8. Make a cuppa and eat! Try not to eat the whole lot in one go!
